Principe Borghese tomato seeds are the variety grown in Italy for sun-drying. Pick a whole cluster and hang it against a hot sunny wall to dry or cut them in half and use a dehydrator. Sun-dried tomatoes can be canned or frozen, and maintain their flavour and nutritional qualities. This variety also makes excellent tomato paste for canning or fresh use.Try growing some in three to five gallon pots on the balcony, or up against the south facing wall of a house to maximize heat from the sun. This will produce more fruits with better consistent fruit set.

Summer-ripened tomatoes are a good source of vitamin C and beta-carotene. The lycopene in the tomatoes is an anti-oxidant, but is only released when the tomatoes are cooked. They also contain compounds that block cancer-causing nitrosamines. We use the convention of Bush to mean determinate (fruit set more or less all at once on short plants). Vine means indeterminate (fruit sets over a longer time on tall-growing plants). Follow along with this handy How to Grow Tomatoes Guide and grow some food.
