Garlic is a fascinating plant. Over time, the same variety can begin to look different when grown in different climates or soils. This natural variation, known as phenotypic plasticity, means that a red-skinned garlic you started with might appear paler after a few years. Don't be alarmed. If your garlic is still healthy, flavourful, and producing bulbs you like, it's perfectly fine to continue planting your own stock.
