The name Celosia is derived from the Greek word meaning burned. It is an appropriate name for this annual with flame-like blooms. Celosia seeds can be started indoors and transplanted when summer has truly arrived. The plant is a member of the amaranth family and is grown for its edible leaves in many parts of the world.
