Kohlrabi salad with cilantro and lime is a refreshing and healthy summer salad made with kohlrabi, cilantro, lime, jalapeΓ±o and a citrus vinaigrette This tastes good the next day too.

Serves 4-6

Ingredients:
2 medium kohlrabi, cut into matchsticks
1 head very thinly sliced fennel
1 tart (not sweet) apple, peeled and cut into chunks
114mL (Β½ cup) chopped cilantro (one small bunch)
1 jalapeno pepper, seeds removed, chopped very fine
114mL (Β½ cup) chopped scallion
orange zest from one orange
lime zest from one lime

Citrus Honey Vinaigrette:
57mL (ΒΌ cup) olive oil (or Β½ each olive oil and avocado oil if the olive oil is very strongly flavoured)
57mL (ΒΌ cup) fresh orange juice (juice from one orange)
57mL (ΒΌ cup) honey
44mL (3 Tbsp lime juice (juice from one large lime)
15mL (1 Tbsp) rice wine vinegar
2.4mL (Β½ tsp) kosher salt

Trim and peel the kohlrabi. Cut off two ends. Cut in half from top to bottom. Thinly slice, rotate and slice again, making ΒΌ inch matchsticks. Place in large bowl with chopped cilantro, scallions, finely chopped jalapeΓ±o, lime zest and orange zest. Whisk dressing together in a small bowl. Toss with salad. Refrigerate until serving. Garnish with citrus zest and cilantro.
