Red Leaf Amaranth

Amaranthus tricolour
This heat lover is a very nutritious leaf vegetable. This variety has large, fleshy, pale-green or burgundy and green leaves that go well in salads. They can also be cooked quickly, faster than spinach. Plant in early summer in very warm soil and harvest by cutting young leaves which will re-grow.

Many of these crops can be harvested at 2 stages of life-as small, young plants (seedling crops) or as larger, mature plants. If growing the plant in the season that it bolts (goes to seed), harvest as soon as leaves are big enough to eat, and then plant another round. This way you will get very quick, tender harvests.
