Spinach
Popeye's Favorite Food!
If you love spinach salads and eggs Florentine, you owe yourself a big patch of Organic spinach. Spinach prefers cool weather to thrive, spring and fall are best. Spinach in summer tends to bolt. Spinach resents transplanting, but seeds germinate well in temperatures as low as 50 degrees F, so there is no advantage to buying plants or to starting seed indoors. If you have any further questions please do not hesitate to call us. At West Coast Seeds, we speak Spinach! Spinach is a valuable source of beta carotene and vitamin K. The oxalates in spinach will block the uptake of calcium and iron from the spinach when it is cooked, but not from other foods eaten at the same time.
Avon
This semi-savoy variety works well for spring and early summer planting, and also performs well in the fall. Avon also performs well for early spring seeding. Stagger the sowings of this speedy grower for a longer harvest in spring to early summer, and then again from late summer 'til frost. Avon's large, tender, dark green, lightly crinkled leaves have a wonderful flavour either cooked or raw in salads. Slow to bolt, and resistant to powdery mildew races 1 and 2.

New Zealand Spinach
Familiar to many gardeners, this is not really a spinach. It provides copious amount of leaves for salads and cooked greens in mid-summer. Once it is established it is vigorous and trouble-free. It needs lots of heat to germinate so start inside or wait until May or June to seed outside. Soak the small hard seed overnight before planting. The flavour is better if the plants have some shade from the sun. Pick the leaves and young shoots of this trailing plant regularly to lengthen the harvest. New Zealand Spinach is perennial in mild winters.
