Zucchini
Family: Curcurbitaceae
Also known as courgettes, these thin-skinned summer squash have few calories and many uses in the kitchen. Excellent as a moisturizer in cake batters, the firm flesh can also be added to pasta sauces, marinated and grilled on the barbecue, baked, broiled or fried. Cubed zucchini makes an outstanding addition to summer soups, and is an essential ingredient in Ratatouille. Pick the fruits when they are under 20cm (8") long, while the flesh and seeds are still tender, or pick them very small with the flower buds still attached for an interesting sauteed side dish. Zucchinis are a useful source of folate, potassium, manganese and vitamin A.
Amatista Grey
An upright bush that produces classic grey type zucchinis that are easy to spot and easy to pick. Grey-green skinned fruits are held aloft against a dark green stem, making this an attractive, as well as productive plant. This variety is somewhat resistant to yellow mosaic virus and powdery mildew. Grows to 90cm (36") tall with fruits weighing less than 500g (1 lb).

Romanesco Zucchini
The large, open, bushy heirloom plant produces distinctively ribbed Italian zucchini 30-40cm (12-16"). Fruit are long with pale green flecks and ribs on dark, grayish green skin. Romanesco has a very pleasant "nutty" taste and a presence that transcends the world of "ordinary" zucchini. Technically, Romanesco is a type of cocozelle squash, as it develops a bulbous end - zucchinis are traditionally evenly thick along their length.

Ronde de Nice
A round French heirloom zucchini from Provence, grown for generations. The succulent, tender flesh is at its peak while the fruits are still less than 7.5cm (3") in diameter, or grow the fruits on to be hollowed out and stuffed for an interesting summer side dish. The flesh of this zucchini is so tender that the fruits are prone to bruising, which is why it doesn't turn up in grocery stores. It is however, perfect for the home vegetable garden.
