Squash
Summer Squash
The thin-skinned summer squash have few calories and many uses in the kitchen. The thick-skinned winter squash have darker flesh and are a prime source of beta-carotene and minerals. (Family: Curcurbitaceae)
Winter Squash
Grown in summer they develop a firm skin that protects the squash for winter storage and eating. Field-cure for 10 days in the sun, or cure indoors in a warm room for 4-5 days. To prevent mould, sponge the skins with clean water before storage.
Squash cross-pollinate within a species. This won't affect this year's fruit, but if you grow 2 varieties of C. pepo, for instance, the fruit will have seeds that, if planted, will grow next year into a fruit that does not resemble what you harvested this year.

Vine produces small 3-4kg (7-9 lbs) hubbard-shaped squashes that have orange flesh and keep well. An attractive, slate blue, flavourful variety for gardeners and commercial growers. (5 s/g)
Bennings Green Tint

Benning's Green Tint pattypan squash is a pretty little pale-green, almost white, elegant scallopini that grows on a tidy, productive bush. The excellent flavour is good raw with dips.

Small- to medium-sized squash are round with flat tops and bottoms. Thick, dry, sweet orange flesh that gets even sweeter several weeks after harvest. Vine.

A mild tasting, thin-skinned, delicate squash. The smallish 500g (1/2 lb) fruits on this sometimes sprawling plant will store well for months after harvesting. Sweet and lovely. Fruits are oblong and creamy white, striped with green bands.

An extra-early, vigorous vine with small leaves and abundant fruits. Fairy is large and oval, with smooth skin that is striped in pale green and orange-yellow. The flesh of each 1.1kg (2 lb) fruit is golden and thick with a lovely sweet flavour. Good resistance to powdery mildew.
