Rhubarb
Rhubarb is a fantastic perennial vegetable choice for the corner of the garden. With a bit of effort getting just one plant established, it will produce over an over for ten years or more. Nothing beats the crisp, tart, sweetness of fresh rhubarb stalks baked in a cobbler, a pie, or served hot with some ice cream - yum! Plus, rhubarb is extremely cold hardy, and can be grown right across Canada.
Victoria Organic
The greenish-red stalks on this certified organic, heirloom variety have a slight taste of red wine, without being tough or stringy - delicious in pies and cobblers. The usable stalks are 25-30cm (10-12") long, under dark green, ruffled leaves. Easy to grow from seed. Sow in April, but wait 12-18 months before harvesting. After that, the stalks can be picked from February to April each year. Choose a sunny site for growing rhubarb. Please note that the leaves of all rhubarb plants are slightly toxic, and will produce stomach upsets if eaten. Many organic growers wrap full grown leaves around the stems of other vegetables to deter caterpillars and other insects.
Matures in 12-18 months. (open pollinated seeds)
