Mustards
True mustards are usually members of the species Brassica juncea, but there are a number of Asian vegetables of the species B. rapa that really belong in this category as well. They are included below. All these greens have a similar range of flavours and spiciness to their leaves - and can be enjoyed raw in salads, as baby greens or full size, or cooked in stir-fries, steamed, braised, or added to soups. These varieties are all relatively similar in growth form, but the leaves themselves are available as highly serrated (mizuna), huge and flat (giant red), concave (tah tsai), and even curled (giant southern curled).
All of the varieties listed here are well suited to cool season and even winter gardening. Komatsuna, tah tsai, and mizuna/mibuna are particularly hardy types.
Bau Sin
A broad-leaf Chinese mustard green that is popular in Taiwanese cuisine. The leaves and stalks are dark green, and may curl inwards to form a kind of head in cooler weather. Sow in late summer for harvest in late fall and over the winter. Leaves are crispy and tender - the mildest and sweetest of all mustard greens. Grows well in Coastal gardens!

Giant Red

When small, the lovely burgundy-coloured leaves with light green veins are so mild and delicious they can be eaten in salads. In summer, big leaves pack a proper mustard punch but they are much milder when cooked or when grown in cooler weather. Very winter-hardy, Giant Red can be planted into October or in early spring to harvest as small leaves every few days. For big plants, thin to 20-30cm (8-12").

Komatsuna
Brassica rapa var. pervirdis
Often known as mustard spinach, its leaves are tender and mild. It can be used as a cut-and-come-again crop at any stage of growth. Use steamed or stir-fried or in salads and soups. Komatsuna is a traditional ingredient in Japanese cooking. It features excellent bolt resistance and cold tolerance so can be grown all year round.

Komatsuna Red
Brassica rapa var. pervirdis
This variety tolerates heat well and can be planted from spring to fall. Leaves are round, flat and purple on top with green undersides and green stems. They are good in salads, sandwiches, and stir-fries, but don't over-cook or the colour fades. Use as a baby leaf in salad blends.

CERTIFIED ORGANIC! Closely related to Mizuna, these plants grow into a spray-like clump with lots of smooth, narrow, strap-like, light-green leaves. Their slightly sharp flavour is great raw in salads and when lightly cooked. The variety's vigorous growth is ideally suited for cut-and-come-again harvest. We recommended it for late summer planting and it is winter-hardy if protected. Earlier plantings should be harvested promptly.

Red Dragon

Red Kyona Mizuna

Ruby Mizuna
Ruby Mizuna has indented bronze leaves with a bit more green on the underside of each, and on the midrib, which adds an appealing visual touch to salads and mixes. Southern Giant Curled

Southern Giant Curled has proved quite effective in research trials as a trap crop for flea beetles in transplanted cole crops. Remarkably long-lasting curled type, Southern Giant Curled is a beloved classic known for big yields of spicy greens. Ready for eating in only one month from sowing, Tendergreen Mustard spinach is a vigorous, quick-growing variety for sowing from spring to late autumn. Excellent dark green leaves. The spreading, medium-green, broad, smooth, thick leaves have a very mild flavour. Plants reach about 45cm (18") in fertile soil and should be thinned to at least 20cm (8") apart. Note: It bolts around May 1 if planted in February. Plant again in mid to late August. Use as a mustard green. Cole crop.

Tokyo Bekana
CERTIFIED ORGANIC! A very nice, slightly curled mustard with light green, ruffled leaves. Although this HEIRLOOM variety can be grown to full size for cooking, the baby leaves are spectacular raw, and work particularly well in salad mixes for the market. Tokyo Bekana is sometimes listed as "small Chinese cabbage," but it's closer to lettuce in texture, with a surprisingly sweet flavour that is neither hot (like some other mustards) or bitter (like some lettuces). At full size, its delicate leaves develop succulent white petioles, making it good for bunching. As if all that weren't enough, it does not bolt in summer, and is hardy enough to grow all winter if you provide some cover.
