The cabbage is derived from a leafy wild mustard plant, native to the Mediterranean region. It was known to the ancient Greeks and Romans; The English name derives from the French/Norman caboche ("head"). The dense core of the cabbage is called the 'babchka.' It is related to the turnip and broccoli, kale and collards.
Charmant
Summer harvest Charmant offers excellent eating quality with a sweet flavour. The dense, smooth heads are medium-green with a creamy, yellow-white interior and weigh 1.5-3kg (3-6lb). Plants stand for weeks without splitting and are well suited to close spacing to produce smaller heads.

Copenhagen Market
A Danish HEIRLOOM introduced by H. Hartman & Co. in 1909. This early variety forms round, solid heads 15-20cm (6-8") in diameter, making it it the largest early roundhead for summer harvest. Good keeping, very uniform, and richly flavoured. Popular market variety that has the added benefit of shipping very well.

Danish Ballhead
Danish Ballhead are mild and tender, this is a great, general-purpose cabbage good for kraut, slaw, or cooking. Big 8-25cm (7-10), light-green, well-protected heads stand happily in the garden well into the winter.

Early Jersey Wakefield
These summer harvest HERITAGE, unique, pointed heads are medium-sized and 1-1.5kg (2-3lb), with tender, dark-green, fine-tasting, loose leaves. Early Jersey Wakefield cabbage seeds were in W.H. Steve No 39 Seed Catalogue published in Steveston, B.C. in 1890.

Embassy
This is a very hardy, semi-savoyed, medium-green cabbage that averages 1-1.3kg (2-3lb). When sown in June to July, it can be harvested from October right through to April and through short periods of -12 degrees Celsius (10 degrees Fahrenheit) temperatures.

Ermosa
Cooks appreciate this big savoy for salads. Ermosa is in wonderful cole slaw, or to wrap fillings. Savoy cabbages have a rich full flavour. Ermosa is a fancy, late-season variety for planting late spring and fall and winter harvest. Very uniform, round 15-18cm (6-7inches) heads have a short core. Ermosa cabbage heads are filled densely with creamy yellow interior leaves. Ermosa holds up well into the fall and withstands winter rains.

Green Summit
Plants are medium sized, with very few light-green leaves. The heads are uniform, firm, crisp, around 1.5 to 2kg in weight, and the shape of a peach. A fine cabbage for both raw and cooked eating. Good flavour. Summer/fall harvest.

January King
A French HEIRLOOM with pretty green heads, lovely purple markings adorn slightly savoyed outer leaves. The heads are 1.5-2.25kg (3-5lb) on compact, very cold-hardy plants. If planting early July, they will hold in the garden until March.

Pixie
These summer harvest pixies are darling little cabbages, much like the Early Savoy Express, at about 1kg (2lbs) each. Beautiful leaves hold sweet flavour and are arranged in a rather loose creamy centre that is perfect for salads. They grow very quickly so start a few each month since they do not hold well in the garden. The slightly pointed heads are in a small frame for closer planting.

Providence Savoy
An attractive dark blue/green mid season savoy with fine deep blistered leaves. It produces solid 1/2kg good round heads. Internally the heads are well filed with a short core and have excellent eating qualities.

Red Jewel
High yielding and very uniform maturity. Red Jewel has deep red heads under purple/blue wrapper leaves. The core is short so it's ideal for shredding. Nice overall flavour, and decent tolerance to cold snaps. Summer/fall harvest.

Sui Choi China Express
Brassica campestris subsp. pekinesis
This Chinese cabbage is often marketed as sui choi. These sweet, crisp greens are ideal for salads and a mainstay of the stir-fry. Big, broad, barrel-shaped, and pale-green heads are tightly packed and 0.6-2.2kg (11/2-5lb) after trimming. This variety has good bolt resistance and excellent uniformity. For full-sized heads sow in summer with the last planting 10 weeks before frost. Established plants are vigorous and will stand in the garden until freezes get severe. However, seedlings will bolt if they are exposed to temperatures below 10ºC (50ºF) for more than 2 weeks; so protect early spring planting with cloches.

Sui Choi Wa Wa Sai
New novelty baby Chinese cabbage bred in Japan. Head weight approx 300-500g from Spring or Autumn sowing. Matures in 60 days from transplants. Suggested spacing is 20-30cm. Lovely sweet flavour.

Super Red 80
These summer-harvest, beautiful, deep-red, round heads in big wrapper leaves resist splitting in the fall. Taste is fairly mild. Head size can be controlled by spacing. For 1kg (2.5lb) heads, space 20cm (10") apart in the row. They will get larger in spacing up to 45cm (18"). Sow January - February. Grow 3-4 weeks at 60F then harden off one week. Sow directly or transplant into packs for sale in early Spring.

Taiwan Cabbage
An oblate or flat-growing hybrid known as KY Cross, with heads that are wider than they are tall with massive wrapper leaves. This popular variety has really nice flavour and outstanding heat tolerance in heads averaging 1.5kg, but up to 2.5kg (6 lbs!) in warm summers with lots of fertility. Excellent heat resistance. Late summer/fall harvest.
