Chamomile |
Many species of chamomille are considered to be weeds, since they are so vigorous and persistant that a light dusting of seed scattered onto any piece of sunny ground in spring will guarantee flowers for years. Since seeds require open soil to germinate, they are often found near roads and landfills and in fields of crops.
Harvest chamomille flowers for a soothing and relaxing tea. The small flowers do require a bit of patience to gather but picking them on a warm afternoon can be a very leisurely way to spend time in the garden. Place the flowers on a screen in a well-ventilated and shaded place. Turn them every few days until they are dry then store them in a punctured paper bag.

Matricaria recutita
Petite daisy-like flowers nod on a low plant. To better harvest the flowers, it is best grown in a bed by itself. German Chamomile prefers cool weather so sow in early spring and again in late summer. Gather flowers before they fully open. Fresh or dried, use them for a soothing tea or in many medicinal preparations. Re-seeds.
